The fairgrounds are winding down. Somewhere outside, rides are going dark and the smell of popcorn is fading into sawdust and night air. In here, it's just you and your steer - the rhythmic drag of a brush, the soft huff of breath, the amber glow of barn lights overhead. You've done this a hundred times. It's supposed to feel routine.
